Preheat the oven to 350ºF.
Scoop 2 tbsp. coconut oil into a microwave-safe bowl. Warm in the microwave in 15 second intervals until it's melted, or pop in the oven for a couple minutes while it's preheating.
Add 1 ¼ cup of whole wheat flour to the melted coconut oil. Mix until fully combined.
Whisk eggs into the mixture, one at a time.
Rinse blueberries and pat dry with a towel. Cut them in half if you're using fresh berries. Fold the berries into the dough.
Use your hands to craft the dough into a ball. Roll out the dough on a clean surface. Add the extra 2 tbsp. whole wheat flour to the surface and the rolling pin to prevent the dough from sticking.
Once the dough is flat and smooth, cut into shapes using your cookie cutter.
Place the treats on a baking sheet that's lined with parchment paper, or thinly coated with oil to prevent sticking.
Bake for 15 minutes.
